Pasta mediterránea / Mediterranean pasta

A veces me dan unas ganas locas de comer pasta, y esta es una buena receta para esos momentos.

Hervir en agua con sal fideos secos, según las instrucciones del paquete. Mientras tanto, en una sartén con un poco de aceite de oliva, saltear un par de tomates en cubos, un diente de ajo aplastado y dos anchoas en conserva. Cocinar y revolver durante unos minutos, hasta que el tomate se empiece a desarmar y las anchoas hayan desaparecido por completo (si no te gustan las anchoas, se pueden omitir, aunque solo le dan un toque salado al tomate).

Una vez listos los fideos, colar y mezclar con el tomate salteado (yo le saco el ajo justo antes). Esta vez, le agregué alcaparras y unas hojitas de menta, pero también queda genial con aceitunas negras y albahaca.

Sometimes I desperately need some pasta, so this is a good recipe for moments like those.

Boil some salted water and cook the dried pasta according to the package’s instructions. In the meantime, add a splash of olive oil to a pan and sautée a couple of diced tomatoes, a smashed garlic clove and two (canned/jarred) anchovy fillets. Cook and stir for a few minutes, until the tomatoes start to wilt and the anchovies have completely disintegrated (you can omit the anchovies if you don’t like them, although they only give the tomatoes a salty flavor).

Once the pasta is done, strain and mix with the sautéed tomatoes (I take the garlic clove out just before). I added some capers and mint leaves this time, but this is also great with black olives and basil.
